If you have been following us during our Veg It adventure, you may know that we love to cook this dish, and that’s why you can often find it on our weekly menu!
This time, we are excited to share with you our secret recipe for days without our tasty meal ;).
Recipe for 4 serves
Ingredients
1 red onion
2 cloves of garlic
1 large red pepper
2 tomatoes
2 sweet potatoes (600g)
1 chile
1 tsp cumin, 1 chili, and 1 cinnamon
30g fresh coriander
800g whole canned tomatoes
400g red beans
Let’s cook!
Cut the sweet potatoes into small pieces, sprinkle with oil, salt, cumin, and cinnamon and bake for 30′. Meanwhile, cut the onion, pepper, and garlic and fry them in a saucepan.
Add the spices, coriander stems, and chili and continue to cook over medium heat for 8′. Add the beans, canned tomatoes, and fresh tomatoes.
Bring to a boil and then add the secret ingredient, the game-changer: 20g of dark chocolate DA BOMB.
Stir and cook for 20′, adding the roasted yams at the end.
It’s delicious served with tortilla chips, guacamole, and/or rice.
